Summer Rum Sour

A sour is an alcohol based cocktail made with lime or lemon juice. Egg whites are often included too. Today we’re sharing a version that uses aged rum and a final touch of mango and lime foam made with Smartwhip.




  • 50ml aged rum
  • 15ml rhubarb syrup
  • 25ml lime juice
  • 40ml apple juice
  • Sliced apple garnish


  • 15ml rhubarb syrup
  • 40ml mango juice
  • 25ml lime juice
  • 2 egg whites from medium-sized eggs



  1. Add  50ml aged rum, 15ml rhubarb syrup, 25ml lime juice, and 40ml apple juice to your Boston shaker. Add ice and shake for 15 seconds, until chilled.
  2. Fine strain into a chilled cocktail glass.


  1. Add to the Smartwhip cream dispenser: 15ml rhubarb syrup, 40ml mango juice, 25ml lime juice, and 2 egg whites from medium-sized eggs.
  2. Add 10 units of pressure and shake for 30 seconds.
  3. Leave in the fridge for 30 mins to set.


To complete the cocktail, add the foam to the top of the cocktail and garnish with apple slices.
